#Foodie Wednesday – Chilli Paneer (Cheese)

A little late today and would like to keep this up once a week if I can. Unless you’re vegan, or have an allergy to cheese, who doesn’t like it. While mild cheddar is the order of the day, I prefer my cheese to have a kick, so like a Mexican cheese slice.

I also like Paneer (fresh cheese commonly used on the Indian Subcontinent) and you can get this either as a block or diced up. Chilli Paneer is a firm favourite of mine and you can make it rich in sauce or dry. Here’s my attempt at it.

Trying to break an old habit

Breakfast, they say is one of the most important meals of the day. Won’t begin to argue with that as technically they (foodie scientists) are pretty much spot on. Now what a good breakfast consists of is dependent on who you talk to. Oatmeal based cereal, nuts, granola, vegetable; the list is endless. If you are like me, then there is nothing like a strong, gently brewed cup of tea and two helpings of a digestive biscuit.

I love tea (de-caf for me) so no shame in admitting that while I will squeeze in a cereal or toast, tea and biscuits is the starter for me. In reality for a lot of us, while we may manage to scramble out of bed early enough, we are always time poor on the first meal of the day. So recently I have turned to making smoothie’s as a helpful alternative. I have a book at home but also following @letsgoveg on #instagram. But this particular recipe comes from a tv programme I watched over the weekend.

I call it ‘green morning power up’

There’s nothing complicated about the ingredients, but when mixed together give a pleasing taste. Here’s what’s involved to make two glasses:

  • Handful of baby spinach
  • 1 x avocado
  • 1 x sweet apple (but you can use a Royal Gala too)
  • 1 x banana
  • Handful of blueberries
  • Dash of water (so it’s not too lumpy)

Whiz all the contents together in a mixer and there you go. Kept me filled for most of the morning and I didn’t snack in between….but I did have another cup of tea. Enjoy.
